1 c. flour ¾ c. canned pumpkin
½ c. brown sugar 1 egg, beaten
2 t. baking powder ¼ c. milk
1 t. pumpkin pie spice ¼ c. vegetable oil
½ t. salt 1 c. uncooked oatmeal
¼ t. baking soda
Sift flour, brown sugar, baking powder, spice, salt and soda together. Combine pumpkin, egg, milk and oil; mix well. Add to flour mixture, stirring slightly. Add oats, stir until moistened. Fill lightly greased muffin tins ¾ full. Bake at 425 degrees 18 to 20 minutes. Serves 12.
