PUMPKIN BARS

 

4 eggs

1 2/3 cups sugar

1 cup vegetable oil

1 can (16 oz. pumpkin)

2 cups all-purpose flour

2 t. ground cinnamon

2 t. baking powder

1 t. baking soda

1 t. salt

 

Icing:

1 pkg. cream cheese (3 oz.) softened

2 cups confectioners’ sugar

¼ c. butter or margarine, softened

1 t. vanilla

1 – 2 T. milk

 

Bars: In mixing bowl, beat eggs, sugar, oil and pumpkin. Combine flour, cinnamon, baking powder, baking soda and salt. Gradually add to pumpkin mixture and mix well. Pour into an ungreased 15” x 10” pan. Bake 350 degrees for 25-30 min. Cool completely.

 

Icing: Beat cream cheese, sugar, butter and vanilla in small mixing bowl. Add enough milk to achieve desired spreading consistency. Spread over bars.

 

Yield: 2 dozen
