1 cups sugar, divided

cup (1 stick) margarine, softened

2 egg whites

1 cups flour

1 cup quick or old-fashioned oats, uncooked

t. baking soda

1 cup pumpkin

t. pumpkin pie spice

cup sesame seeds


Beat 1 cup sugar and margarine until fluffy, mix in egg whites. Stir in combined flour, oats and baking soda. On wax paper, press into 16 x 12-in rectangle. Spread combined pumpkin, c. sugar and spice over dough to -inch from edge. From narrow end, roll up dough. Sprinkle sesame seeds around roll, pressing gently. Wrap in wax paper, freeze overnight or until firm. Heat oven to 400 degrees F. Spray cookie sheet with no stick cooking spray. Cut frozen dough into -inch slices. Bake on cookie sheet 9 to 11 minutes or until golden. Remove to wire rack; cool completely.
