HARVEST TIME BARS

 

c. butter t. baking powder

1 c. brown sugar t. soda

2/3 c. pumpkin t. salt

1 t. vanilla c. coconut

2 unbeaten eggs c. nuts

c. flour

 

Melt butter, stir in brown sugar, pumpkin, vanilla and unbeaten eggs. Sift together in separate bowl the flour, baking powder, salt and soda. Beat liquid ingredients for one minute, add dry ingredients and stir. Mix together coconut and nuts, also 2 T flour. Add to mixture, spread in a 9-inch square pan that has been greased and floured.

 

Bake for 30 min. at 350 degrees. Frost while warm. Frosting can be caramel powdered sugar, butter powdered sugar or a hard sauce.
