(This recipe was given to me by one of my mother,
who has passed away)
2 c. sifted flour 1 ½ t. baking powder
2 t. cocoa ½ c. shortening
¾ t. salt 1 ½ c. sugar
1 ½ t. cinnamon 2 eggs
¼ t. cloves 1 ½ c. applesauce
½ t. nutmeg 1 c. raisins
½ t. allspice ¾ c. walnuts
½ t. soda
Set oven at 350 degrees to preheat. Grease, line waxed paper or dust with flour, bottom of 13 x 9 x 2 pan. Sift together flour, cocoa, salt, cinnamon, cloves, nutmeg, allspice, soda and baking powder. Add raisins nd nuts and toss to coat.
Cream shortening and sugar 2 min. Add eggs, one at a time while beating 2 min. Add flour mixture alternately with applesauce while beating on #2 speed. Scrape bowl as necessary, beat only until blended, about 4 min. for adding. Turn into pan. Bake about 50 min. or until done. Cool. Frost with caramel or coffee frosting of your choice.
